Food choices matter, and we know that we must change the way we eat today to reduce our environmental impact. We need to decrease our consumption of red meat in favour of green (plant-based) and blue (seafood) alternatives. But we also need to diversify the seafood that we already eat today, expanding our palates to new types of dishes. How can we do that? Changing consumer habits is easier said than done, and simply providing information won’t be enough. Why is it difficult, and how can we help consumers make better food choices?
